Roasted Zucchini

Roasted Zucchini:


2 zucchini
3 tablespoons of olive oil
Salt and pepper for taste


Heat the olive oil in a large skillet over medium heat. Add the zucchini to the skillet and cover, allowing it to cook for 5 minutes. Stir in the salt and pepper; cover again for another 5 minutes, then remove from heat. Sprinkle with Parmesan cheese to serve.
